“Choose a job you love, and you will never have to work a day in your life”. And so, they created it.

In 2008, what started as a dream became reality when the Gambini’s and brother-in-law Rick Mensik purchased 17 acres of land in Dripping Springs, Texas. These 3rd and 4th generation Italian immigrants wanted to bring a touch of Italian culture to the picturesque setting of Dripping Springs with their premium authentic olive oil. The conditions in parts of Texas are much like those in Italy, making the on-site olive orchard possible. Now, nearly a decade later, our olive oils are among the “Top Five Authentic Olive Oil Companies in America” in 2017, have won various medals, and continue to prosper.

Texas Hill Country Olive Company supplies the highest quality olive oil in the country. Our orchards certified organic, the only of their kind here in Texas. We offer premium extra virgin olive oils, crushed flavored olive oils, and balsamics. These quality products add a burst of delicious flavor to anything from salads to meats. All of our fine products are available in our shop right here in Dripping Springs or online! We also offer a line of spa-quality skin products like soaps, body creams, and lip balm using our fine oils.

We’re proud of our family-owned company, and we want to share our story with you! Spring break is just around the corner. Whether you are vacationing or staycationing, a Texas Hill Country Olive Company tour is a great stop on your Dripping Springs road trip! With temperatures in the 60s and 70s, it’s the perfect time to see what all the buzz is about. We offer guided tours every Friday and Saturday at 11:30 a.m, 12:30 p.m., 1:30 p.m., and 2:30 p.m. For spring break, additional tour dates include April 20th, 22nd, 23rd, and 26th at 11:30 a.m. and 1:30 p.m. On each tour, you’ll see our beautiful orchard, our mill, and our tasting room where you’ll be treated to a free tasting!  Lunch can also be provided for an additional fee.

Interested in growing your own olives? Texas Hill Country Olive Company will be holding tree sale events throughout March and April. The official kick off will be on March 25th from 11 a.m. to 4 p.m. Our nursery will have olive tree experts on-site to help you choose the best possible tree for your needs. The varieties available will include Coratina, Lucca, Chemlali, Leccino, Picual, Chiquitita, Mission, Pendolino, and Picual.
